- 2 tablespoons avocado oil
- 1 onion, sliced
- 2 pounds grass-fed beef stew meat
- 1 cup mushrooms, sliced
- 4 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 2 large sweet potatoes, chopped
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons balsamic vinegar
- ½ cup tomato paste
- 2 cups fire-roasted tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons fresh dill, chopped
- 3 sprigs thyme
- 3 bay leaves
- 4 tablespoons arrowroot starch
- ½ teaspoon sea salt
- 1 teaspoon black pepper
- parsley, for garnishing
- First brown the meat by putting the avocado oil in a large pan on the stovetop. Heat to medium and add the onions and beef.
